Torpedo shaped and beautifully colored, the Yellowfin Tuna, also known as "Ahi" is a member of the very large mackeralfamily making it one of the larger edible fish in the sea with weight upwards of 400 pounds. They are pelagic and retlessly roam the deeper offshore waters of Florida's Gulf and Atlantic Coasts.
Tuna is oily, rich tasting fish and extremely flavorful. It has a red translucent flesh when raw and a white opaque flesh when cooked. It is usually sold in steak form and is perfect for grilling, broiling, pan-searing, or serving raw. However you prepare tuna, it is best to cook it very quickly on the medium-rare side. If overcooked it becomes very dry and tough. But before cooking, make sure to removethe dark muscle or sinew from the meat which has a more intense "fishy" flavor.
